It is a recipe for success - heritage meets modern, with a dash of originality and it is on the menu for one of Bunbury's most historic and iconic pubs.

A new-look team is working hard to breathe new life into the Rose Hotel after the renowned pub changed ownership last year.

General manager Blair Lennon has been trusted with the task of helping the hotel reach its full potential and if his impressive resume is anything to go by, it will get there soon.

Mr Lennon said he had been tasked with similar challenges around the State, including reviving Perth's Belgian Beer Cafe and The Saint George Hotel in Innaloo.

"This will be the third heritage venue I have done up in WA and I'm really excited about giving this icon a new breath of fresh air," Mr Lennon said.

After a renovation blitz over the past few months, the pub's function rooms, hotel rooms and bottle shop have been given a modern spin.

Mr Lennon said the hotel would still be influenced by its history with original fittings, furniture and photographs used throughout the building.

"It's all about keeping that heritage feel," Mr Lennon said.

"And we'll keep it growing from generation to generation."

The aesthetics of the pub are not the only changes, with new head and sous chefs joining the Rose Hotel team.

Head chef Cameron Morrison has relocated from Melbourne, while sous chef Sam Atkinson has migrated north after a stint with Margaret River winery Hay Shed Hill.

Mr Lennon said both chefs would help the food menu, focusing on the local produce "take off" of the region.
