Wilson Brewing Co. ‘grows up’ with new Stirling Terrace venue, reassuring it still has ‘Wilson-esque touch’

A popular Albany brewing company is “growing up”, with the opening of its new venue at a prominent CBD location marking a major milestone in its transition. Wilson Brewing Co. left its unpretentious brew shed in McKail and moved into its newly renovated Stirling Terrace premises — the former White Star Hotel — on September 18. Founder and head brewer Matt Wilson said the expansion was “really exciting” for the business as it signalled an opportunity to grow both patron numbers and product distribution. “Effectively we were in a shed for seven years,” he said. “We tried to do a few different things to grow it over the years, but with COVID and everything it just didn’t quite work. “Then, when we got this fantastic opportunity to take over a beautiful old building, we jumped at it. “We’ve gone from being a 50-person venue to a 500-person venue, so it’s really exciting.” The new venue was renovated in less than four months — a fact Mr Wilson attributes to “half of Albany helping out”. As well as polishing up the old hotel, the team have reopened the front bar and added pool tables. Soon, they will have the old brew kit up and running to create limited and seasonal beers, like the fan-favourite Oyster Stout, to be served exclusively at the venue alongside six guest taps for independent breweries. “The market changed a bit the last few years, so we had to fall back to keeping our core range solid but we’re really excited to return to our old ethos of using locally sourced products to make exciting beer,” Mr Wilson said. Venue manager Sam Heidenberg said the move sparked a lot of feelings for the longtime staff, but all were now assured the feel of the company wouldn’t change. “At our old place, it felt like you were stepping into Dad’s old shed where he brewed at home,” he said. “Moving to a more professional venue made some people a bit nervous that that vibe would change. “But they’ve realised we’ve still kept that Wilson-esque touch, and it’s the same beer, same people, same vibes — we’re just growing up a bit and finding our feet, being more confident in ourselves. “Vibes and beer is still what we do best.” Mr Heidenberg said the team planned to start off slowly to ease into the new capacity, but assured it was only “phase one” of the move. “This is us opening the doors running on 80 per cent, so when things inevitably get chaotic, we can expand and move on in a reasonable pace,” he said. “We’re taking baby steps at first, but we’re planning on expanding the menu, increasing the things we do in the venue, and mixing it up to keep it surprising. “Let’s just say we have a very decent sized venue for live music events.” With most of the products brewed in Perth at the Blasta Brewing facilities, Mr Wilson said the company was keen to be a part of WA’s blooming craft beer network. “Growing the venue means we need more beer, and the wholesale side has just shot through the roof,” he said. “We are super Albany-proud, but we’ve got a good Statewide presence too.” As the company expands, Mr Wilson said the business’ mentality remained local. “That’s always been our thing — keeping the feeling of not being over the top,” he said. “Everyone’s always welcome at Wilson’s, whether they come in Ugg boots or a suit.”
